A couple of months ago I found a how-to for birthday cake popcorn. Unfortunately I can’t for the life of me remember where I found it but I thought I could remember how to make it so I decided to give it a try! There were only four required ingredients…popcorn, white chocolate, white cake mix, and sprinkles and the steps were easy. First I popped the popcorn, then I stirred together melted white chocolate and a scoop (or two depending on how much you are making) of dry white cake mix. Once it was mixed I poured it over the popcorn and added sprinkles 
This is the perfect snack for movie nights, game night, or an after school snack because not only is it yummy, but it is super easy to make!

This fall my sister moved to Haiti to serve as a nurse at an orphanage in Haiti. Children of the Promise has a mission to care for the sick and malnourished infants in their area of Northern Haiti and they currently have about 65 babies in their care. The orphanage is currently in need of a variety of things to help support the babies’ needs including diapers, wipes, sippy cups, hand sanitizer, liquid hand soap, blankets, Gerber fruit/veggie purees, and more. And so I have committed to raise funds to donate supplies to the orphanage.

Here is my first attempt at getting back into the groove with cooking and entertaining…and let me just say this was quite the welcome back! This is the kind of recipe that would have my brother drooling for more and sends me back to the table for seconds. And thirds. The Fresh Spinach and Artichoke Dip with Bacon was delicious and I can’t wait to make it again…maybe for the Super Bowl…

- I really miss cooking and entertaining.

This post is about 20 days late, but it’s here! I can not believe that 2012 is here and I have no idea where the last six months went! I think that one of the reasons I’ve been dragging my feet with this post is that I knew that writing this post meant that I would have to admit that I was not able to meet a goal.
You see, last year I set out to make 365 recipes from How Sweet It Is in 365 days…and I didn’t do it. For the past five months I’ve been working 80-85 hours a week…some days I’m lucky I even remember to eat, let alone cook a new recipe every day! There have been so many times along the way that I have wanted to try a new recipe but the reality is that right now between teaching middle school and a growing Thirty-One business I am working a lot of hours.
My goal this year is not to finish the challenge because the truth is I’m still working two jobs, but I am going to start trying to do some more cooking and entertaining, because I miss it. A lot.
Cooking Challenge Day #85 – Loaded Spinach Salad

I am a very picky salad eater! It’s not that I don’t like vegetables (I love them!), but rather that I am really particular about the leafy green part of the salad. I only like Romaine lettuce sometimes and things like Arugula kind of weird me out. But as a rule I always like spinach in a salad (which is great because spinach is really good for you!) So you can imagine that I was pretty excited to see try this Loaded Spinach Salad.
The salad was delicious and probably my two favorite ingredients were the bacon and the gorgonzola. If you are one of those people that rarely ventures away from cheddar, provolone, swiss, and mozzarella, I would like to recommend challenging yourself to new (and more daring!) cheeses…you won’t regret it!
Things I Learned on Day #85…
- I just might have to agree with my brother and Jessica over at How Sweet Eats that bacon really does make things better…but I don’t know if I am 100% convinced
- Calorie for calorie spinach is one of the most nutritious foods available…good thing I like it!
Cooking Challenge Day #84 – Grilled Corn and Tomato Fettucine

Have you ever grilled a tomato? If you haven’t, I would highly recommend that you do. Soon. The sounds of a tomato being grilled are inexplicable and the smells are delectable. So as soon as I saw this Grilled Corn and Tomato Fettucine I couldn’t wait to try it! And it was as delicious as I was hoping.
And I love the colors in this pasta!
Things I Learned on Day #84…
- I don’t think I could ever be a vegetarian. As delicious as this was I think that the next time I make it I will add grilled chicken or steak.
- Grilled tomatoes are amazing. Period.
Cooking Challenge Day #83 – Crispy Parmesan Asparagus Sticks

Whenever I go to T.G.I. Fridays I order the Green Bean Fries…not sure what it is about the fries that I like so much but when I saw this recipe for Crispy Parmesan Asparagus Sticks I figured I would probably love these as much.
And I did!
In fact, I think I might have loved these even more because I think they are a bit healthier than the green bean fries (or at least I’m going to tell myself they are healthier!). I liked the crispiness of the asparagus sticks and of course anything with cheese is a winner in my book!
Things I Learned on Day #83…
- Vegetables often taste better when cheese is added.
- I’m curious if I could try this recipe with fresh green beans instead of asparagus sticks?
