Cooking Challenge Day #2 – Cinnamon Pecan Crusted Salmon

I don’t know if I can come up with enough adjectives to describe Day #2 of the Cooking Challenge…delicious, mouth-watering, delectable, and the list could go on and on with synonyms for those words.  I absolutely love salmon and so I knew from the beginning that at the very least I would like tonight’s dinner.  And like it I did!

The Cinnamon Pecan Crusted Salmon from How Sweet It Is was exactly as advertised…”It was perfect.”  The recipe calls for a BBQ sauce coating on the salmon and so I went with my all-time favorite,  Gates Bar-B-Q sauce (You will know you are important to me if I serve you Gates BBQ sauce because I can’t buy it locally, it has to be shipped…and I won’t do that for just any guest!)

Things I learned on Day #2…

- I would like (need) to buy a nice camera

- I need to call my aunt and ask her to send me some more Gates BBQ sauce

-I hope on Day #314 I am still learning as much as I am on Day #2

-Food processors are amazing!

      A little secret…I made them last week when we had a snow day before the challenge even started…and they were heavenly! I will be definitely be making them again during this challenge!

    You’d be surprised what turing off the flash, shooting in low light and tweaking in a photo-editing program will do for you photos….Maybe try that first before investing in a new camera :)
