Cooking Challenge Day #11 – Peach Pie Muffins

It’s official. I am on a muffin kick. There is just something about a warm muffin in the morning that starts the day off right. And thankfully for me Jessica over at How Sweet It Is has plenty of muffin recipes for me to choose from so I can enjoy my muffins and keep up with my cooking challenge.
Now I will admit that today’s muffin choice was a bit odd because the recipe calls for fresh recipes and if you learn one thing in this post, it’s that Pennsylvania doesn’t have much to offer in the way of fresh peaches in February. But I wanted to try the Peach Pie Muffins and once I had my heart set on them there was no turning back! So I went with the next best thing to fresh and that’s frozen. I am really looking forward to making these again come peach season, but I have to admit that even with the frozen peaches they were pretty good!
Things I Learned on Day #11…
- I love baking. Cakes, cupcakes, muffins, breads, etc. But I have yet to master cookies. Making the perfect cookie evades me and I don’t know why? Maybe I will learn to make the perfet cookie during this challenge.
- I love baking cups. It’s difficult to see it in the picture but these ones have fun hearts all over them. I have baking cups in so many colors and styles and I can’t resist picking up a pick whenever I see something fun.
