I love Italian food. I love Mexican food. So combining the two and making an Enchilada Lasagna sounds simply divine. And I am happy to say that my prediction was right on target! I feel a little bit like a broken record saying this on so many posts, but it’s still true and so I feel it is worth repeating…this recipe was easy to make!
Things I learned on Day #12…
- It’s really difficult to make the layers of lasagana truly stay in neat layers (see above picture for proof of my inability to do this)
- It is best to do dishes as you’re going if possible to avoid a lot of clean-up at the end
