Cooking Challenge Day #17 – Whole Wheat Orzo with Grilled Chicken and Roasted Vegetables

I have found the one downside to this cooking challenge…when I make a recipe that I absolutely love I am not sure when I’ll be able to make it again because part of the challenge is that I make a new recipe every day.  Fortunately, I am at least confident that there are many more fabulous recipes coming in the days and months ahead.  So even though I may not make some of these favorites again anytime soon, I do know that I will probably find new favorites!

Today’s recipe was Whole Wheat Orzo with Grilled Chicken and Roasted Vegetables and if the sound of forks scraping the plates was any indication, then this meal was a big hit!  I loved the roasted vegetables and grilled chicken (although next time I would like to try the marinade Jessica recommended)

Things I Learned on Day #17…

-I need to make some more baked treats to bring into work…they miss the goodies from last week!  (Good thing Jessica posted the muffins she did yesterday!)

- The next couple of days will be challenging as I will be having surgery and heading out of town…but I am determined to still be able to keep up with this challenge!
