We had an unexpected snow storm here (well maybe it wasn’t so unexpected but because I am of the belief that winter is over I have stopped watching the weather forecasts and instead just choose to believe that it will be warm enough to wear a skirt to work) and so it seemed like a good time to make chili, specifically Chunky Fire Roasted Chili.
It also seemed like a good recipe to make since it was my once week endeavor to cook for 20-25 people and chili is an easy recipe to multiply. The picture below (with the crock pot full of chili) is just half of the chili I made…there was another pot equal in size simmering on the stove.
Things I Learned on Day #22…
- I can’t believe I’m so close to finishing my first month of the challenge!
- Chili is not always a “follow-the-recipe” type of food. So while this chili pretty closely follows Jessica’s Chunky Fire Roasted Chili I didn’t measure everything.
