I love zucchini. I especially love it in the summer time grilled with yellow squash. Even though it’s not quite summer zucchini sounded really good this week and so I went with Parmesan Zucchini from How Sweet It Is for today’s cooking challenge recipe.
And it was perfect, crispy goodness. So good that even though I am committed to a new recipe every day for a year this will definitely be made again soon!
Things I Learned on Day #37…
- Summer is coming. Well at least spring anyways and that puts us one step closer to summer!
- Again, cheese makes things better. But as my mom pointed out I think the same thing about frosting, peanut butter, and a few other things so maybe I should just say that food makes things better
