I am so excited that there are leftovers from this meal because I can’t wait to have this for lunch this week! I know I’ve said it before but it’s true so I’ll say it again, cheese makes things better. So was there really any possible way for this Cheesy Chicken and Rice Bake not to turn out well?!?
The chilis and the medium spicy salsa gave this just the right amount of kick and while the flavor wasn’t noticeable, the Greek yogurt gave it a great texture.
Things I Learned on Day #43…
- It is important to read labels at the grocery store. This recipe called for diced chilis. I didn’t stop to read the can and bought whole chilis. Not a big deal but it meant I had to dice the chilis.
- Sometimes I wish I had a sous chef who would do my food prep (like the dicing) for me. But I’d hire a stylist first so I don’t see this happening any time soon.
