Cooking Challenge Day #76 – Skillet Chicken with Peppers and Peanuts

I sort of have an obsession with peppers. As in I think they should be added to as many meals and snacks as possible. I suppose that this is better than having an obsession with say…ice cream.
The Skillet Chicken with Peppers and Peanuts was absolutely delicious. I made it with couscous and it was a great compliment. And even though I didn’t think far enough ahead to marinade the chicken for 24 hours (mine marinated for about 1 hour), the chicken still had a great flavor. Now I’m imagining what it would have been like if I had marinated the chicken for 24 hours!!!
p.s. Don’t you just love the colors of the peppers?!? And I think I have found the perfect dish for next year’s Olympics!
Things I Learned on Day #76…
- If you’re going to use chicken tenders instead of chicken breasts, recalculate the cooking time!
- I need to buy a stove to oven pan. asap.
